Where it comes from
Mozzarella originated in southern Italy, traditionally made from water buffalo milk around Naples and Campania. Italian immigrants brought it to North America, where the firmer low-moisture cow's-milk version became the defining melting cheese of American pizza.
Buying it
For fresh mozzarella, look for a clean milky scent, bright white colour, and a ball that is soft but holds its shape in its liquid. For low-moisture, choose blocks over pre-shredded for better melt quality, as anti-caking agents in shredded versions inhibit smoothness.

Fresh mozzarella should be kept submerged in its liquid in the refrigerator and used within five days of opening. Low-moisture mozzarella keeps tightly wrapped in the fridge for up to three weeks.
