Cucumber Tea Sandwich

    Place the paper-thin cucumber slices on a paper towel, sprinkle lightly with salt, and let sit for 10 minutes to draw out excess moisture. Pat dry.

    In a small bowl, thoroughly mix the softened cream cheese, minced fresh dill, and lemon juice until smooth and herbaceous.

    Spread a thin, even layer of the herbed cream cheese mixture onto one side of all 4 slices of bread. This prevents the cucumbers from making the bread soggy.

    Layer the dried cucumber slices slightly overlapping on 2 of the bread slices.

    Top with the remaining 2 slices of bread, cream cheese side down. Press together very gently.

    Using a very sharp knife, carefully trim away the crusts from all sides. Cut each sandwich diagonally into four small triangles. Serve immediately or cover with a damp paper towel until teatime.
