Garlic Greek Sauce (Tzatziki)

A cool, creamy Greek yogurt and cucumber sauce brightened with garlic and lemon.

    Cut the cucumber into very small pieces or grate it coarsely. Sprinkle with a little salt and let sit for a few minutes to draw out excess moisture, then gently rinse off the salt without soaking.

    Crush the garlic and stir it into the yogurt. For a thicker sauce, drain the yogurt through cheesecloth first and use only the thick portion.

    Stir the cucumber into the yogurt mixture. Season generously with black pepper and, just before serving, stir in the lemon juice. Serve chilled as a dip or sauce.
