Prepare the grill: Preheat your grill (or cast-iron skillet) to medium-high heat.

Butterfly the sausages: Slice the sausages lengthwise down the middle without cutting all the way through (butterflying) to ensure they cook evenly and lay flat.

Grill the sausages: Place the butterflied sausages cut-side down on the grill. Cook for 5-7 minutes until deeply charred and crisp, then flip and cook for another 3-4 minutes until cooked through.

Toast the bread: Slice the bread rolls in half lengthwise. Place them cut-side down on the grill for the last 2 minutes of cooking to toast and absorb the sausage drippings.

Assemble: Generously slather the toasted bread with fresh chimichurri sauce. Place the hot sausage in the bread, top with more chimichurri, and serve immediately.
