    Preheat a grill to high or prepare hot coals. In a small bowl, stir together the softened butter and minced garlic.

    Arrange half of the potatoes in a single layer on a square of double-thickness heavy-duty foil. Dot evenly with half of the garlic butter and season with salt and pepper, then seal the package securely. Repeat with the remaining potatoes and butter in a second packet.

    Roast the packets directly on hot coals or on the grill at high heat for 40 to 45 minutes, turning occasionally, until the potatoes are fork-tender. Open carefully and serve hot.
