Place the potatoes in a pot of salted water, bring to a boil, and cook until tender when pierced with a knife, about 15 minutes. Drain, and when cool enough to handle, peel and cut into 3/4-inch chunks.

In a bowl, stir together the mayonnaise, minced garlic, and parsley. The sauce should be a little loose, so thin it with a splash of lemon juice if needed.

Gently fold the warm potatoes into the garlic mayonnaise until evenly coated, season with salt to taste, and serve at room temperature.
