Preheat the oven to 400°F (205°C). Scrub the potatoes, prick them with a fork, and bake directly on the rack for about 1 hour until soft.

Let the potatoes cool enough to handle, then slice each in half lengthwise. Scoop out the insides into a mixing bowl, leaving a firm 1/4-inch shell.

Add the potato pulp, shredded cheddar, milk, diced ham, sour cream, onion salt, pepper, and softened butter to the bowl. Beat at high speed until smooth and fluffy.
