Zucchini Quiche

A crustless quiche packed with sauteed zucchini, onion, and two melty cheeses.

Instructions

    Preheat the oven to 350°F (175°C) and grease a 9-inch pie plate.

    In a skillet over medium heat, saute the chopped onion in the butter until golden, about 5-7 minutes.

    In a large bowl, combine the cheddar and Swiss cheeses with the grated zucchini and sauteed onion.

    Add the eggs, half-and-half, flour, salt, and pepper, and mix well until evenly combined.

    Pour the mixture into the prepared pie plate (no crust needed).

    Bake for 30-35 minutes, or until the center is set and the top is lightly golden. Serve warm with a salad for a light meal.
