Cardamom Pods
Floral and citrusy with a warm, cooling, eucalyptus-like edge.
Lens analyzedCardamom pods are small, papery seed casings — green, black, or white depending on the species — holding clusters of intensely aromatic seeds inside. Cooks crush the pod to release the seeds or add it whole to infuse rice, tea, and simmered dishes.
Where it comes from
Cardamom is native to the forests of southern India and Sri Lanka and became one of the priciest spices carried along old trade routes to the Middle East and Scandinavia, where it still anchors baking today. It shows up in dishes as different as South Asian biryani, Scandinavian buns, and Middle Eastern coffee.
Buying it
Choose pods that feel plump and slightly sticky rather than dry and brittle, since dried-out pods have lost most of their aroma. Whole pods hold their punch far longer than pre-ground cardamom.
Storing it
Store whole pods in a sealed container away from light; they stay aromatic in the pantry for close to a year, while ground cardamom fades within a few months.
Keeps about 1 year in the pantry.
