Where it comes from

Leeks have been cultivated for thousands of years across the ancient Mediterranean and Middle East, mentioned in Egyptian papyri and Roman texts. They traveled with Roman armies into Britain, where they took such strong cultural root in Wales that they became a national emblem. European immigrants carried leek-cooking traditions to North America, where the vegetable remained a specialty item until the late 20th century surge of interest in French and European cuisines made them a farmers market and grocery store mainstay.

Varieties — Most leeks sold in North America are the standard large European type. Baby leeks (thin, young) are more tender and can be cooked whole. Wild ramps (a North American relative) have a similar but more pungent flavor profile.

Leeks are a foundational ingredient in vichyssoise (French cold leek-potato soup), Welsh cawl (lamb and leek stew), and the French mirepoix variation poireaux à la vinaigrette; in Filipino sinigang and arroz caldo, leeks occasionally appear as a milder onion substitute.

In a modern kitchen — Leeks trap sand and grit deep between their layers. After trimming, halve lengthwise and rinse under running water, fanning the layers open, or soak in a bowl of cold water and swish. The grit sinks; lift the leeks out rather than pouring the water off.

Look for leeks with bright white bases and dark green tops that are crisp and unblemished. Roots should be fresh, not dried. Smaller diameter leeks (2.5–4 cm) are generally more tender. Avoid any with yellowed, slimy, or wilted tops.

Store unwashed leeks in the fridge crisper, wrapped loosely in a damp towel or bag, and trim root ends just before use. Wilted, slimy, or yellowing outer layers signal it's past its best — peel those off or discard.
