Varieties — Parmigiano-Reggiano ages in three main categories: 12-month (dolce, mild and creamy), 24-month (the most common, nutty and savory), and 36+ month (stravecchio, deeply concentrated with crunchy crystals). Grana Padano is the closest relative — similar production, slightly milder, and produced in a wider Italian territory. 'Parmesan' without DOP designation refers to similar-style cheeses made outside Italy.
Parmigiano-Reggiano wheels, which weigh about 40kg each and take over two years to make, are so valuable that several Italian banks accept them as loan collateral — a testament to the cheese's economic and cultural importance.
