Lens analyzedTempeh is a firm cake made from fermented, whole soybeans bound together by a mold culture, giving it a dense, nutty texture very different from tofu's smoothness. The visible whole beans and firm structure let it hold up well to grilling, frying, or slicing into strips.
Where it comes from
Tempeh originated in Indonesia, particularly on the island of Java, where fermenting soybeans with a mold culture became a distinct food tradition separate from the tofu-making techniques that spread from China. It later reached North America through Indonesian immigration and later adoption in vegetarian and vegan cooking.
Buying it
Look for a block with visible whole beans held together firmly and a light, even white or gray coating; dark black or blue patches signal it's gone bad rather than just naturally mottled.
Storing it
Refrigerate it and plan to use the block within about a week of opening; if you won't finish the package in time, freeze what's left.
Keeps about 7 days in the fridge.
