Perfectly Spiced Banana Bread

A warmly spiced banana bread with ginger, allspice, and nutmeg and a hint of lemon zest.

Instructions

    Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

    Sift the flour, baking powder, baking soda, salt, ginger, allspice, and nutmeg together in a bowl. Stir in the lemon zest and chopped almonds and set aside.

    In a large mixing bowl, beat the butter and margarine until soft and creamy, then beat in the sugar until light and fluffy.

    Add the eggs and beat until thoroughly blended.

    Beat in the flour mixture alternately with the mashed bananas until the batter is well blended.

    Pour the batter into the prepared pan and bake in the center of the oven for 1 hour to 1 hour 5 minutes, until a toothpick inserted in the center comes out clean.

    Cool in the pan on a wire rack for 10 minutes, then invert and cool completely on the rack before slicing.
