Whole Grain Buttermilk Pancakes

Instructions

    In a medium bowl, whisk together the whole wheat flour, oat bran, cornmeal, brown sugar, baking powder, baking soda, and salt.

    In another bowl, combine the buttermilk, egg yolks, and oil until smooth.

    In a large clean bowl, beat the egg whites until stiff peaks form.

    Stir the buttermilk mixture into the flour mixture just until combined, then gently fold in the beaten egg whites, keeping the batter light.

    Lightly coat a skillet or griddle with cooking spray and set over medium heat. When hot, pour 1/4 cup batter per pancake, cooking 4 at a time.

    Cook for about 2 minutes until bubbles appear on the surface, then flip and cook another 2 minutes until golden brown and cooked through.
