In a bowl, combine the chicken with the chili powder, 1 tsp ginger, salt, garam masala, soy sauce, and yogurt. Cover and marinate in the refrigerator for at least 5 to 6 hours or overnight.

Add the beaten egg to the marinated chicken and toss with enough cornflour to lightly coat each piece.

Heat the oil in a wok until hot, then deep-fry the chicken in batches over low to medium heat until golden and cooked through, about 6-8 minutes per batch. Drain on paper towels. The chicken is now ready to eat as is.

For a hotter, saucy version, heat a little oil in a clean wok and fry the curry leaves, remaining ginger, garlic, green chili, spring onions, and coriander leaves for a couple of minutes until fragrant.

Stir in a few spoonfuls of yogurt and the tomato sauce, then add the fried chicken and toss over the heat until every piece is coated in the sauce. Serve hot.
