    Heat the beef tallow or oil in a hot pot or wide heavy pot over medium heat, then fry the Pixian doubanjiang for 2 minutes until the oil turns red.

    Add the dried chiles, Sichuan peppercorns, ginger, garlic, and scallions; stir-fry for 1 minute until fragrant.

    Pour in the chicken stock, bring to a boil, then simmer for 15 minutes to season the broth.

    Set the pot on a tabletop burner and keep the broth at a lively simmer.

    Arrange the lamb, tofu, napa cabbage, mushrooms, and wheat noodles on plates around the pot.

    Mix the sesame paste with the light soy sauce in small dipping bowls, thinning with a spoonful of hot broth if desired.

    Cook ingredients in batches at the table: lamb for about 30 seconds, tofu for 2 minutes, vegetables for 1 to 2 minutes, and noodles until tender.
