Napa Cabbage

In Korean culture, napa cabbage is so central that the national kimchi-making tradition (kimjang) — the communal autumn preparation of hundreds of heads of napa cabbage into kimchi — was recognized by UNESCO as an Intangible Cultural Heritage.

A fresh head can weigh 2–4 pounds; smaller heads are easier to use before they go limp. Refrigerate wrapped in plastic for up to 1 week.

Wrap loosely and refrigerate in the crisper drawer; napa cabbage stays crisp for a couple of weeks there. Trim and discard any yellowing or slimy outer leaves before use.
