Pad Woon Sen

A light, savory stir-fry of springy glass noodles tossed with egg, vegetables, and a garlicky soy sauce.

Instructions

    Soak the glass noodles in warm water for 10 minutes until soft and pliable, then drain well and set aside.

    Heat the oil in a wok over high heat, add the garlic and ground pork, and stir-fry for 3-4 minutes until the pork is no longer pink and lightly browned.

    Push the pork to one side, crack in the eggs, scramble them briefly, then fold everything together.

    Add the drained noodles, oyster sauce, soy sauce, and sugar, tossing constantly for 2-3 minutes so the noodles absorb the sauce and turn glossy.

    Stir in the napa cabbage and green onions, cook for another minute until just wilted, then serve immediately while hot.
