Varieties — White button mushrooms, cremini (brown/baby bella), and portobello are all the same species — Agaricus bisporus — at different ages and sizes. Button is youngest and mildest; cremini is a little older with more flavor; portobello is fully mature with a wide, meaty cap. Shiitake and wood-ear are separate species and separate catalog entries.
