Old Fashioned Crumb Cake

    Preheat the oven to 375°F (190°C) and grease an 8-inch square baking pan.

    In a large bowl, cut the shortening into the brown sugar, flour, baking powder, cinnamon, and salt with a pastry cutter or two forks until the mixture forms coarse, even crumbs. Set aside 3/4 cup of the crumb mixture to use as topping.

    Add the egg and milk to the remaining crumb mixture and stir just until a smooth batter forms; do not overmix.

    Spread the batter evenly into the prepared pan and sprinkle the reserved crumbs over the top.

    Bake for 30 to 35 minutes, until the top is golden and a toothpick inserted in the center comes out clean. Cool in the pan for at least 10 minutes before cutting into squares and serving.
