Heat ghee in a large heavy pot and fry the sliced onions until dark golden brown and crispy. Remove half for garnish.

In the same pot, add the meat, tomatoes, yogurt, and biryani masala. Cook over medium heat until the meat is tender and covered in a thick, rich gravy (about 40 mins for beef, 20 mins for chicken).

In a separate large pot, boil the soaked basmati rice in heavily salted water for exactly 5 minutes until it is 70% cooked. Drain immediately.

Layer the partially cooked rice evenly over the thick meat curry in the heavy pot.

Drizzle the saffron-infused milk and the reserved crispy onions over the top layer of rice.

Cover the pot with a tight-fitting lid (seal with dough or foil if needed). Cook on the lowest possible heat for 20 minutes to allow the steam to finish cooking the rice and meld the flavors.
