    In a medium heavy-bottomed pot, combine the coconut milk, water, and salt. Bring to a gentle boil over medium-high heat.

    Stir in the rinsed basmati rice. Return to a boil, then immediately reduce the heat to the lowest setting.

    Cover the pot with a tight-fitting lid to trap the steam.

    Cook undisturbed for 18-20 minutes until all the liquid has been absorbed by the rice.

    Remove the pot from the heat and let it rest, covered, for 10 minutes.

    Gently fluff the fragrant coconut rice with a fork before serving.
