A hearty breakfast combo of marinated beef (tapa), garlic fried rice (sinangag), and a fried egg (itlog).

    Marinate the Beef (Tapa): In a bowl, mix the thinly sliced beef with soy sauce, calamansi juice, half of the minced garlic, and brown sugar. Marinate for at least 30 minutes (or overnight for best flavor).

    Cook the Tapa: Heat 1 tablespoon of oil in a pan over medium-high heat. Add the marinated beef (without overcrowding) and pan-fry for 3-5 minutes until the liquid evaporates and the beef develops a caramelized, slightly charred crust. Set aside.

    Make Garlic Fried Rice (Sinangag): In the same pan, add another tablespoon of oil. Sauté the remaining minced garlic over medium-low heat until golden brown and crispy. Break apart the cold day-old rice and add it to the pan. Toss vigorously for 5 minutes, seasoning with a pinch of salt until heated through.

    Fry the Eggs (Itlog): In a separate non-stick pan, fry the eggs sunny-side up with crispy, lacy edges but a runny yolk.

    Assemble: Plate the savory beef tapa alongside a generous mound of garlic rice and top with the sunny-side-up egg. Serve with a side of spiced vinegar for dipping.
