Instructions

  1. 1

Char the whole eggplants directly over a gas flame or under a broiler for 8-10 minutes, turning often, until the skins blister and blacken and the flesh is completely soft.

  2. 2

Let the eggplants cool for a few minutes, then peel off the charred skin while keeping the stems attached as handles.

  3. 3

Place each peeled eggplant on a plate and gently flatten it with a fork into a fan shape about 1/2 inch thick.

  4. 4

Beat the eggs with the salt and pepper in a shallow dish, then dip each flattened eggplant into the egg, holding it by the stem so it is fully coated.

  5. 5

Heat the oil in a skillet over medium heat, lay in an egg-coated eggplant, then pour a little extra egg over the top and fry for 2-3 minutes per side until golden and set.

  6. 6

Drain briefly on paper towels and serve hot with steamed rice and a side of banana ketchup or spiced vinegar.
