Make the béchamel sauce: Melt butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Cook until the sauce thickens and coats the back of a spoon. Stir in a pinch of salt, pepper, and nutmeg.

Preheat the oven to 400°F (200°C). Lay out the bread slices on a baking sheet.

Spread a thin layer of béchamel on two slices of bread. Top each with a slice of ham and a generous handful of grated Gruyère.

Place the remaining bread slices on top to close the sandwiches.

Spread a thick, even layer of béchamel over the top of each sandwich and sprinkle heavily with the remaining grated Gruyère.

Bake for 10-15 minutes until the sandwiches are hot and the cheese topping is bubbling, melted, and beautifully browned.
