Heat a Korean BBQ grill pan or large cast-iron skillet over medium-high heat until it begins to smoke slightly.

Lay the thick pork belly slices flat on the grill. Cook for 3-4 minutes until the bottom is golden brown and crispy, then flip.

Add the halved garlic cloves and sliced chili peppers to the grill, letting them cook in the rendered pork fat.

Once the pork is deeply browned on both sides and fully cooked through, use tongs and kitchen shears to cut the meat into bite-sized pieces right on the grill.
