Freezer Breakfast Burritos

    Heat the olive oil in a large nonstick skillet over medium-high heat, then add the breakfast sausage and cook for 6 to 8 minutes, breaking it into crumbles, until browned and cooked through. Transfer to a bowl.

    In the same skillet, add the frozen hash browns and cook for 8 to 10 minutes, stirring occasionally, until golden and crisp at the edges, then add to the sausage bowl.

    Reduce the heat to medium-low, pour in the beaten eggs seasoned with salt and pepper, and gently scramble for 2 to 3 minutes until just set but still soft, as they will cook further when reheated.

    Warm the tortillas briefly to make them pliable, then lay them out and divide the sausage, potatoes, scrambled eggs, and shredded cheese among them, mounding the filling slightly below center.

    Fold in the sides of each tortilla, then roll tightly from the bottom into a snug burrito, and wrap individually in parchment paper or foil.

    Place the wrapped burritos in a freezer bag and freeze for up to 3 months. To reheat, remove the wrapper and microwave from frozen for 2 to 3 minutes, flipping halfway, until heated through.
