Preheat the oven to 425°F (220°C). Place a wire rack over a baking sheet and lightly spray with cooking oil (this keeps the chicken crispy on both sides).

In a shallow dish, mix the Panko breadcrumbs and grated Parmesan. Place the beaten egg in a separate shallow dish.

Dip each chicken breast into the egg, letting excess drip off, then press firmly into the breadcrumb mixture to coat evenly.

Place the coated chicken on the wire rack. Bake for 15 minutes until golden and the internal temperature reaches 165°F (74°C).

Remove from the oven. Spoon 2 tablespoons of marinara sauce over each chicken breast and top with a sprinkle of mozzarella cheese.

Return to the oven and broil on high for 2-3 minutes until the cheese is melted and bubbly. Serve over cooked pasta or zoodles in prep containers.
