Grate the English cucumber using the large holes of a box grater.

Place the grated cucumber in a fine-mesh sieve or the center of a clean kitchen towel. Sprinkle with 1/2 tsp salt and let sit for 10 minutes to draw out the water.

Vigorously squeeze the cucumber in the towel (or press down in the sieve) to extract as much liquid as absolutely possible. This is crucial for a thick tzatziki.

In a medium mixing bowl, combine the strained cucumber, Greek yogurt, minced garlic, olive oil, lemon juice, and fresh dill.

Stir the mixture until completely combined. Taste and adjust salt or lemon juice if necessary.

Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
