Agua de Jamaica (Hibiscus Agua Fresca)

Instructions

    Simmer the Hibiscus: Bring 1 litre of the water to a boil with the hibiscus flowers and optional cinnamon, then simmer for 10 minutes.

    Steep: Turn off the heat and let it steep for another 10 minutes to deepen the colour.

    Strain: Strain out the flowers, pressing to extract all the liquid.

    Sweeten: Stir the sugar into the warm concentrate until dissolved.

    Dilute: Add the remaining cold water and adjust the sweetness and strength to taste.

    Serve: Chill, then serve over ice with lime wedges.
