Fry Tortillas: Heat the vegetable oil in a skillet over medium heat. Fry each corn tortilla for 30 seconds per side until lightly crispy but still pliable. Drain on paper towels.

Layer Eggs and Sauce: Carefully slide one fried egg onto each bean-coated tortilla. Ladle the hot ranchero sauce generously over the eggs and tortillas, leaving the yolk slightly exposed.

Garnish and Serve: Sprinkle generously with crumbled Cotija cheese and fresh cilantro. Serve immediately with extra warm tortillas or avocado slices on the side.
