Chickpea Mash Sandwich

A vegetarian alternative to tuna salad.

Instructions

    Drain the chickpeas in a strainer and rinse them thoroughly under cold water. Shake off any excess moisture.

    Place the rinsed chickpeas in a medium mixing bowl. Using a potato masher or a sturdy fork, mash them until most of the chickpeas are crushed but some texture remains.

    Add the mayonnaise (or olive oil), Dijon mustard, salt, and pepper to the mashed chickpeas.

    Stir vigorously to combine until the mixture is creamy and holds together like a thick spread.

    Lay out the slices of bread and evenly divide the chickpea mash onto two of the slices.

    Top with the remaining slices of bread, press down gently, and slice the sandwiches in half to serve.
