Refried Bean Tostadas

Crisp tostada shells smeared with warm canned refried beans and piled high with cheese, lettuce, and salsa.

Instructions

    Empty the refried beans into a small saucepan and warm over medium-low heat for 5 to 6 minutes, stirring frequently and adding a splash of water if they are too thick to spread.

    Arrange the tostada shells on a baking sheet and spread a generous layer of the warm beans across each one, going nearly to the edges.

    Sprinkle the shredded cheese evenly over the beans, then slide the sheet under a broiler set to high for 1 to 2 minutes until the cheese melts and bubbles.

    Remove from the oven and immediately top each tostada with a handful of shredded lettuce.

    Finish with spoonfuls of salsa and a drizzle of sour cream, then serve right away while the shells are still crisp.
