Instructions

    While the rice cooks, open the can of beans and pour them (undrained) into a small saucepan over medium heat.

    Stir the chunky salsa into the beans and bring the mixture to a gentle simmer.

    Cook for 3-4 minutes until the beans are heated through and the sauce thickens slightly.

    Divide the hot cooked rice into serving bowls and ladle the bean and salsa mixture generously over the top.

    Garnish with shredded cheddar cheese and fresh cilantro before serving.
