Braise the Beef: In a heavy pot, combine the beef, water/broth, and half the coconut milk. Bring to a gentle boil, cover, reduce heat to low, and simmer for 1.5 hours until beef is tender.

Fry the Paste: In a separate skillet, scoop the thick cream from the remaining coconut milk and heat over medium until oil separates. Fry the Massaman paste in it for 3 minutes until aromatic.

Combine: Scrape the fried paste mixture into the pot with the tender braised beef. Stir well to combine.

Add Veggies & Nuts: Add the cubed potatoes, roasted peanuts, and any remaining coconut milk. Simmer uncovered for 20-25 minutes until the potatoes are fork-tender.

Season: Stir in tamarind paste, palm sugar, and a splash of fish sauce. Simmer for 5 more minutes. The curry should taste distinctly nutty, slightly sweet, and tangy.
