Fried Tomatoes

Firm tomato slices in a crisp, lightly sweet batter, fried golden brown.

    Wash the tomatoes but do not peel them. Cut into 3/4-inch thick slices and lay them on paper towels to drain off excess moisture for about 10 minutes.

    In a shallow bowl, combine the flour, salt, sugar, and black pepper. Dust each tomato slice in the flour mixture on both sides, shaking off the excess.

    Add the evaporated milk to the remaining flour mixture and whisk to form a thick, smooth batter, adding a splash more milk if needed.

    Dip each floured tomato slice into the batter to coat completely.

    Heat 1/2 inch of vegetable oil in a heavy skillet over medium-high heat (about 350°F). Fry the tomato slices in batches for 2-3 minutes per side until golden brown and crisp. Drain on paper towels and serve warm.
