Mallow Topped Sweet Potatoes

Creamy mashed sweet potatoes spiced with cinnamon and nutmeg under a golden blanket of toasted marshmallows.

    Heat the oven to 350°F (175°C) and lightly grease a 10x6-inch (about 1 1/2-quart) baking dish.

    In a large bowl, combine the mashed sweet potatoes, melted butter, softened margarine, brown sugar, salt, cinnamon, and nutmeg. Beat with a hand mixer or mash thoroughly until smooth and well blended.

    Spread the sweet potato mixture evenly into the prepared baking dish, smoothing the top with a spatula.

    Bake uncovered for 20 minutes, until heated through and the edges begin to bubble.

    Scatter the miniature marshmallows evenly over the top and return to the oven for 8 to 10 minutes more, until the marshmallows are puffed and golden brown. Watch closely so they do not burn, then serve warm.
