Three Sisters Vegetables

A traditional trio of squash, green beans, and corn simmered together with butter until tender.

Instructions

    Peel and seed the squash and cut it into bite-sized cubes. Trim the green beans and cut them into 1-inch lengths. Remove the husks and silk from the corn and cut the kernels from the cobs.

    In a large heavy saucepan, combine the water and squash. Cover, bring to a boil, then reduce the heat to low and simmer for about 15 minutes, until the squash begins to soften, adding a little more water if needed.

    Add the green beans and cook for 5 to 8 minutes, until bright green but still tender-crisp.

    Stir in the corn, butter, salt, and pepper, adding a little more water if necessary. Cover and cook for 3 to 5 minutes, until the vegetables are tender and the liquid is absorbed.
