    Peel the Beans: Soak the beans briefly and peel by rubbing them together to remove the skins. Rinse until completely skinless.

    Blend: Blend the peeled beans with very minimal water. The resulting paste must be thick and smooth, not watery.

    Aerate the Batter: Transfer the paste to a mortar or bowl and whisk vigorously for 5-10 minutes. This incorporates air, making the Akara fluffy on the inside.

    Fold in Aromatics: Gently fold in the finely chopped onion, minced scotch bonnet pepper, and salt just before frying.

    Fry: Heat the vegetable oil in a deep pan to 350°F (175°C). Scoop the batter with a spoon and drop gently into the hot oil. Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
