Andouille Sausage

Boldly smoky, garlicky, and spiced with black pepper and cayenne; firm, coarsely textured bite; pervasive savory depth.

Lens analyzed

Andouille is a coarsely ground, heavily smoked pork sausage rooted in Cajun Louisiana. It is the backbone flavoring of gumbo, jambalaya, and red beans and rice — its spicy, garlicky smoke is irreplaceable in those dishes.

Where it comes from

Acadian settlers from French Canada arrived in Louisiana in the eighteenth century, bringing their pork-curing traditions with them. The Louisiana bayou environment — hot, humid, abundant in pigs and hardwood smoke — shaped andouille into the intensely smoky sausage it is today. The towns of LaPlace and Opelousas became legendary for their andouille, and the sausage became synonymous with Cajun cuisine across North America.

Varieties — Louisiana andouille (coarsely ground, double-smoked, the Cajun standard); commercial andouille (widely available, milder than authentic versions); French andouille de Vire (a more delicate, traditional offal sausage — very different).

In Louisiana Cajun and Creole cooking, andouille provides the aromatic fat base that gives the 'Holy Trinity' (onion, celery, bell pepper) its smoky depth — it is often the first protein browned in the pot.

In a modern kitchen — Because andouille is fully cooked and smoked, it only needs to be heated through — but browning the sliced coins in a dry pan before adding to a dish develops a caramelized crust that releases much more flavor into the sauce.

Buying it

Look for a dark mahogany casing from the smoking process. Press the link — it should feel firm, not squishy. Better brands use whole muscle pork rather than mechanically separated meat. Check the ingredient list: garlic and black pepper should appear early.

Storing it

Unopened, vacuum-sealed sausage can be kept in a cool pantry per its packaging; once opened, refrigerate and use within about a week. A slimy casing or off odor means it's turned.

Keeps about 3 days in the fridge.

Out of andouille sausage? Good swaps

  • Smoked kielbasa — Milder in spice and smoke; works in gumbo and jambalaya at 1:1 weight; add extra cayenne to compensate
  • Chorizo (Spanish-style) — Paprika-forward rather than smoke-forward; adds similar pork-fat richness; use in cooked dishes at 1:1
  • Smoked bratwurst — Gentler flavor profile; reduces heat and smoke significantly; best when andouille is unavailable and spice can be adjusted separately
