Whole chicken
Mild and savory, with dark meat tasting richer than the leaner breast meat.
Lens analyzedA whole chicken is the entire bird sold uncut, with skin and bones intact, meant for roasting, spatchcocking, or breaking down into individual pieces at home. Buying it whole costs less per pound than pre-cut pieces and lets a cook get white meat, dark meat, and a carcass for stock from one purchase. Roasting it whole also keeps the meat moister than cooking pieces separately.
Where it comes from
Roasting a whole bird is one of the oldest ways to cook poultry, going back long before butchers began selling pre-cut pieces for convenience. Whole chickens remain a common Sunday dinner centerpiece in North American households, prized partly for being more economical than buying the same bird broken into parts.
Buying it
Check the sell-by date and look at the cavity for any ice crystals if buying it frozen, and compare the price per pound against buying the same chicken in parts, which is usually more expensive.
Storing it
Raw chicken needs cold, consistent storage: refrigerate it if you're cooking within a day or two, or freeze it solid for anything longer. Give a frozen bird a day or two in the fridge to thaw rather than leaving it out on the counter.
Keeps about 2 months in the freezer.
