Kuku Paka

Chicken cooked in a coconut curry.

    Marinate the chicken pieces with the lemon juice, minced garlic, ginger, and half of the turmeric. Let sit for 15 minutes.

    Preheat a grill or a large skillet over high heat. Sear the chicken pieces until deeply browned and slightly charred on all sides (they don't need to be cooked through yet). Set aside.

    In a large heavy pot, heat the oil over medium heat. Sauté the grated onion for 5 minutes until soft.

    Stir in the curry powder and remaining turmeric, cooking for 1 minute until fragrant.

    Pour in the thick coconut milk and bring to a gentle simmer.

    Nestle the charred chicken pieces into the coconut sauce. Cover and simmer gently for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
