Mousse au Chocolat

Light chocolate mousse.

    Set a heatproof bowl over a saucepan of gently simmering water (bain-marie). Melt the dark chocolate and butter together, stirring until smooth and glossy. Remove from heat and let cool slightly.

    Whisk the egg yolks and vanilla extract into the melted chocolate mixture until well combined.

    In a separate, impeccably clean metal or glass bowl, whip the egg whites with a pinch of salt until soft peaks form.

    Gradually sprinkle in the sugar while continuously whipping until you achieve stiff, glossy peaks.

    Briskly whisk one-third of the egg whites into the chocolate mixture to lighten it.

    Extremely gently fold the remaining egg whites into the chocolate in two additions, taking care not to deflate the mixture. Spoon into glasses and chill for at least 4 hours until set.
