Sea salt

Clean, briny saltiness with subtle mineral complexity and a pleasant crunch from larger crystals; less sharp and acrid than heavily refined iodized table salt.

Lens analyzed

Sea salt is salt harvested by evaporating seawater, retaining trace minerals that give it a subtly more complex flavor and a coarser, flakier crystal structure than refined table salt. It is used primarily as a finishing salt — scattered over finished dishes just before serving — where its larger crystals provide bursts of saltiness and pleasing crunch that fine table salt cannot replicate.

Where it comes from

Where land meets sea and sun does the work, sea salt carries millennia of coastal tradition in every crystal — coarser, more mineral, and more interesting than its refined cousin.

Varieties — Fleur de sel (France) is the most prized variety — hand-harvested surface crystals with a moist, delicate texture. Maldon (England) produces iconic pyramid-shaped flakes. Hawaiian red and black sea salts include volcanic minerals. Sel gris is a coarser grey sea salt with higher mineral content.

Fleur de sel from the Guérande region of France is considered among the world's finest finishing salts, protected by traditional harvesting methods passed down through generations of paludiers (salt farmers).

In a modern kitchen — Keep a small dish of flaky sea salt next to the stove for finishing — a pinch of Maldon over a fried egg or a bowl of pasta elevates both texture and perception of saltiness.

Buying it

For finishing, choose Maldon flakes or fleur de sel — they should be sold in boxes or tins, not poured from a shaker, to protect their delicate crystal structure. For general cooking, fine sea salt in a larger bag is economical and performs identically to table salt in cooked applications.

Storing it

Keep sea salt dry in a sealed container. If it clumps, break it up and check for moisture rather than spoilage — salt itself doesn't go bad.

Keeps about 5 years in the pantry.

Out of sea salt? Good swaps

  • kosher salt — Coarse, clean, and widely available; no iodine flavor; the best everyday stand-in for sea salt in cooking
  • table salt — Fine-grained and more intensely salty by volume; reduce quantity by about 25% when substituting for coarse sea salt
  • fleur de sel — The premium sea salt finishing option; use whenever presentation and texture matter most
