Instructions

    In a food processor, blend the fish fillets until smooth.

    Add the coconut milk, tapioca starch, egg, and the finely ground spice paste, pulsing until fully incorporated into a sticky paste.

    Cut banana leaves into 8x8 inch squares and soften them by passing them quickly over an open flame.

    Place 2 tablespoons of the fish paste in the center of a banana leaf square, wrap it tightly into a flat parcel, and secure the ends with toothpicks.

    Prepare a charcoal grill or heat a grill pan over medium heat.

    Grill the parcels for 4-5 minutes per side until the banana leaves are charred and fragrant, and the fish cake inside is firm and springy.
