Instructions

    Blend the soaked keluak flesh with shallots, garlic, coriander, and turmeric to form a dark, earthy paste.

    In a heavy pot, sauté the black paste with lemongrass and kaffir lime leaves until very fragrant.

    Add the beef chunks and stir to coat them in the spice paste until lightly browned.

    Pour in 1.5 liters of water, bring to a boil, then reduce heat and simmer covered for 1.5 to 2 hours until the beef is very tender.

    Skim off any excess fat from the surface of the rich, black broth.

    Serve hot with steamed rice, raw short beansprouts, half a salted egg, and a squeeze of lime.
