Boil the Pasta: Cook the ziti until just shy of al dente (it will finish in the oven) and drain.

Brown the Meat: If using, brown the sausage or beef, then stir it into the tomato sauce.

Make the Ricotta Mix: Beat the ricotta cheese with the egg, the Parmesan cheese, and a little basil.

Combine: Toss the pasta with most of the tomato sauce, then fold in the ricotta mixture and half the mozzarella.

Bake: Bake at 190°C (375°F) for 25-30 minutes until bubbling and golden. Rest 5 minutes and serve.
