Shrimp Scampi (Gamberi all'Aglio)

Garlicky, buttery shrimp in white wine and lemon, tossed with linguine.

Instructions

    Boil the Pasta: Cook the linguine in salted water until al dente, reserving some pasta water.

    Sauté the Garlic: Melt 2 tbsp butter with the olive oil and cook the garlic and a pinch of chilli flakes until fragrant.

    Cook the Shrimp: Add the shrimp and cook 1-2 minutes per side until just pink. Remove to avoid overcooking.

    Make the Sauce: Pour in the white wine and lemon juice and simmer for 2 minutes, then swirl in the remaining butter.

    Combine: Return the shrimp, add the drained linguine and a splash of pasta water, and toss to coat.

    Serve: Finish with parsley and serve at once.
