Crispy Tofu and Vegetable Stir-Fry

A quick and vibrant plant-based stir-fry featuring crispy tofu cubes and a savory soy-ginger sauce.

Instructions

    Press the tofu for 15 minutes to remove excess moisture. Cut into 1-inch cubes and toss with 1 tbsp of cornstarch until evenly coated.

    In a small bowl, whisk together the soy sauce, sesame oil, grated ginger, and a splash of water to form the stir-fry sauce.

    Heat 1 tbsp of neutral cooking oil in a large wok or skillet over medium-high heat. Add the tofu cubes in a single layer.

    Pan-fry the tofu for 6-8 minutes, turning occasionally, until golden brown and crispy on all sides. Remove tofu from the skillet and set aside.

    In the same skillet, add the mixed vegetables. Stir-fry for 4-5 minutes until they are tender-crisp and brightly colored.

    Return the tofu to the skillet, pour the prepared sauce over the top, and toss for 1-2 minutes until the sauce thickens and coats the ingredients. Divide into containers.
