Zucchini Fritters (Kolokithokeftedes)

Crispy Greek fritters made with grated zucchini and feta.

Instructions

    Grate the zucchinis using the large holes of a box grater. Place the grated zucchini in a colander, toss with 1 tsp of salt, and let it sit for 20 minutes to draw out the water.

    Place the zucchini in the center of a clean kitchen towel and twist tightly to squeeze out as much liquid as absolutely possible. The zucchini must be very dry.

    Transfer the dry zucchini to a large bowl. Add the chopped green onions, dill, mint, crumbled feta cheese, and beaten eggs. Mix well.

    Sprinkle the flour and baking powder over the mixture and fold it in until just combined. The batter should be thick and cohesive.

    Heat the olive oil in a large skillet over medium heat until shimmering.

    Drop heaping tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry for 3-4 minutes per side until deep golden brown and crispy. Drain on paper towels and serve hot.
